Kobus van der Merwe’s twenty-seat restaurant on the West Coast of South Africa has changed how we think about the country’s cuisine. A year-long observation.

Wolfgat is not a restaurant in any conventional sense. It seats twenty. It serves a single set menu. It sources strictly within twenty kilometres. And it is, by some distance, the most influential restaurant on the African continent right now.
